Magical Holiday Spiced Cookies (Biscuits)!

Spicy Holiday Cookies!

  • 2 2/3 cup self-rising flour
  • pinch of sea salt
  • 1 ½ teaspoons ground cinnamon
  • 1 ½ teaspoons ground Clove
  • 1 ½ teaspoons ground nutmeg
  • 1 teaspoon ground white pepper
  • 1 cup coconut sugar (changed from ½ cup caster sugar and ½ cup brown sugar).
  • 1 cup butter (250g), cut into cubes
  • 1/3 cup milk
  • ¼ teaspoon Bicarbonate of soda

Make it like so....

  • Preheat oven to 180C or 350F
  • Line two baking trays with baking paper
  • Shift together flour, salt, spices and sugar into a large bowl. Add the cubed butter and rub it into the flour and spice mixture until the mixture looks like bread crumbs. Combine the milk with the bicarb (baking soda) and stir into the flour mixture.
  • Knead lightly, then form the dough into two balls. Allow the dough to chill for at least 30 minutes before creating the cookies.
  • If using cookie cutters, roll the dough out to 4 mm thickness and cut out the shapes. If not using cutters, simply roll into balls the size of A$.50 coin or US$ quarter and flatten a bit when you put on the baking trays.
  • Bake for 15 to 20 minutes, or until golden brown. Allow to cool on a wire rack.
  • Serve dusted with icing sugar.

Please note, the time does not include the 30 minute resting time.
